Soup season is officially here! Pumpkin soup is one of my favourites to make, it’s quick & easy and rich in Vitamin A & C for eye & skin heath and for a good boost of immunity.
RECIPE
Ingredients:
1/2 butternut pumpkin
2 tbsp olive oil
1/2 sea salt
1/2 black pepper
1 tbsp nutmeg
Dash of paprika
1/2 cup coconut cream
1/2 almond milk
1/2 cup veggie broth
2 tbsp maple syrup
1/4 pumpkin seeds
Dash of chilli flakes
METHOD
- Dice pumpkin & coat in oil, salt & pepper and place in air fryer for 10 minutes to soften (or roast in oven for 35 mins).
- In a high-speed blender combine pumpkin, coconut cream, veggie broth, nutmeg & paprika until a smooth consistency is achieved.
- Transfer to large pot and heat up 1 tbsp oil & add in almond milk & maple syrup. Stir until silky.
Sprinkle pumpkin seeds & garnish with chilli flakes (optional). Enjoy!
